Happiness is when all of the pickled beet jars seal!
The pastel pink beets were brilliant red (as in Miss Scarlet in the Library red) at the Farmers Market. Once cooked, they became this beautiful, delicate color.
I've been craving my Aunt Judy's pickled beets since I was in Utah a few weeks ago - they are just so good. I could eat all of these in a week, so unless I'm willing to keep on bottling, I'll have to hold back.
